Line a baking sheet with parchment and pre-heat the oven to 160 (325) degrees.
Mix honey and cayenne pepper in a large bowl.
Add the cashews to the bowl and stir with a metal spoon until they are completely coated in the sweet spicy mixture.
Spread the cashews out on your lined baking sheet and put into the preheated oven for 10-15 minutes, checking and turning the nuts every 5 minutes or so until they are a toasty golden brown.
Put your demerara sugar and sea salt into a pestle and mortar. Grind the large crystals down a bit so that you have a nice balance or powder and chunky crystals.
Once the nuts are cooked, leave them to cool for 5 minutes before tossing them in your sugar and salt mixture.
Once they have completely cooled, enjoy with your choice of drink and store in an airtight container (if they last that long!)
