Recipe: Honey Chilli Cashew Nuts

I spent ages last year searching for the perfect honey chilli cashew recipe and ended up combining and adapting a couple. Its Friday night, so what better recipe than one for these sweet, salty and spicy nuts! They are the ultimate treat to go with a cold drink at the end of a hard week, totally moreish and quick to make using ingredients from the pantry / supermarket.

Using just 5 ingredients and 10 minutes of your time, you will absolutely be thanking me for showing you how.

Glasshouse Girl’s Recipe for Honey Chilli Cashew Nuts

Mix 5 tbsps of clear runny honey (approx 1.3 of a cup for those of you that prefer US measurements) with a teaspoon of cayenne pepper. If you love your treats super spicy then add more or if you like mild add a bit less. You’ll be making this recipe again and again so plenty of time to adjust it to suit your own palette.

To this spicy sticky mixture add 500g of raw whole cashew nuts and mix well.

Spread the now gooey nuts over a parchment lined baking sheet and roast in the oven at 180 degrees centigrade / 350 degrees farenheit for 10-15 minutes.

Here they are after 13 minutes, I just got them out before they burnt!

Whilst the cashew nuts are roasting, put two tablespoons of Demerara Sugar and two teaspoons of coarse salt crystals into a pestle and mortar.

Grind the salt and sugar until you get a mix of powder and smaller crystals. The less you grind, the crunchier your honey chilli cashew nuts will be.

Once the nuts have cooled down for 5 minutes, toss them in the sugar / salt mixture

Crunchy Honey Chilli Cashew Nuts

The perfect salty and sweet snack – adapt chilli, salt and sugar quantities to suit your taste.

Equipment

  • 1 Baking Tray lined with Parchment Paper
  • 1 Mixing Bowl
  • 1 Metal Spoon
  • 1 Tablespoon and Teaspoon measure
  • 1 1/3 cup measuring cup optional

Ingredients
  

  • 500 grams raw whole cashew nuts
  • 5 tbsp clear honey (approx. 1/3 cup)
  • 1 tsp cayenne pepper adjust to taste!
  • 2 tbsp demerara sugar
  • 2 tsp coarse sea salt

Instructions
 

  • Line a baking sheet with parchment and pre-heat the oven to 160 (325) degrees.
  • Mix honey and cayenne pepper in a large bowl.
  • Add the cashews to the bowl and stir with a metal spoon until they are completely coated in the sweet spicy mixture.
  • Spread the cashews out on your lined baking sheet and put into the preheated oven for 10-15 minutes, checking and turning the nuts every 5 minutes or so until they are a toasty golden brown.
  • Put your demerara sugar and sea salt into a pestle and mortar. Grind the large crystals down a bit so that you have a nice balance or powder and chunky crystals.
  • Once the nuts are cooked, leave them to cool for 5 minutes before tossing them in your sugar and salt mixture.
  • Once they have completely cooled, enjoy with your choice of drink and store in an airtight container (if they last that long!)
